Amid the dust and thunder of the frontier, every slot counts. Here’s how to push Satchel capacity past the line and haul more loot, loot, and legends.
The only way to increase inventory capacity is to produce a new larger satchel. You have to contact Pearson at the Dutch gang headquarters and hold down the crafting button.

That’s not all, because each of the offered bags has different requirements before it can be crafted. These requirements can be related to other upgrade projects of the Dutch camp (e.g. improving the medical car) and acquisition of craftsmanship components, which can include such items like perfect quality pelts of wild animals.
The satchels offered by Pearson differ in applications – they can only increase the maximum amount of transferred items, for example they can only store a limited amount of medicines, food or jewels. Choose the satchel that suits you best. The last bag offered (Legend of the East Satchel) increases the capacity limit of the whole inventory. However, you can buy it only after you have produced all the previous bags from the list.
Where to craft satchel upgrades in RDR2
Satchel upgrades are crafted at your gang’s camp by talking to Pearson at the butcher table, and later they can be bought from a Fence after you finish the main story epilogue.
Main crafting location

Use the camp butcher: Go to your current gang camp (e.g., Horseshoe Overlook, Clemens Point) and interact with Pearson at his butcher/crafting stall to access the Satchel menu.

Unlock Leather Working Tools: First buy the Leather Working Tools via the camp ledger near the donation box; this unlocks satchel crafting options at Pearson.
After the story (epilogue)

Visit a Fence: Once the story is completed and you are in the epilogue, upgraded satchels that you could craft with Pearson can instead be purchased directly from any Fence shop.

Same upgrades, different vendor: These Fence-bought satchels give the same capacity benefits as the ones crafted at camp.
Where your pelts go

Donate or keep pelts: You can donate perfect pelts and carcasses to Pearson at camp, and they will be available for satchel recipes when you open his crafting menu.

Unlocking Pearson’s crafting

Buy Leather Working Tools: Go to the camp ledger next to the donation box and purchase the Leather Working Tools upgrade; this is what enables satchel crafting at Pearson.

Progress early story: The ledger itself appears after completing early camp debt-collection missions (the “Money Lending and Other Sins” line), so make sure those are done.
Using Pearson to craft satchels

Find Pearson in camp: Look for Pearson at his wagon/butcher table in your current camp (Horseshoe Overlook, Clemens Point, etc.) and interact with him.

Open the crafting menu: Choose the crafting/upgrades option, then go to the Satchels section; from there you can see each satchel, its required perfect pelts, and craft it once you have the materials.
